Salt-covered vegetables, sealed away from oxygen, feed a strain of bacteria called lactobacilli. They eat the sugars already sitting inside the vegetables themselves — nothing added — and turn them into lactic acid. That’s fermentation, and it’s what naturally preserves the veg and builds the probiotics.
L. mesenteroides — the smallest and most common early bacteria — kicks things off in a salty, low-acid environment.
