What’s actually in the jar

It’s bacteria at work, not a recipe trick.

Salt-covered vegetables, sealed away from oxygen, feed a strain of bacteria called lactobacilli. They eat the sugars already sitting inside the vegetables themselves — nothing added — and turn them into lactic acid. That’s fermentation, and it’s what naturally preserves the veg and builds the probiotics.

The 3-week ferment

Three shifts of bacteria, each with a job.

Days 1–5

The starters show up

L. mesenteroides — the smallest and most common early bacteria — kicks things off in a salty, low-acid environment.

Days 5–16

Real preservation begins

Salt- and acid-tolerant bacteria take over and start building real preservation power.

Don’t rush it: cold storage before day 16 stops this bacteria mid-job.
Days 16–21

Flavor gets finished

L. brevis mellows things out for a rounder flavor. Once the vegetables’ own sugars are used up, fermentation stops.

We ferment at 65–72°F (18–22°C) for the full three weeks. Good bacteria don’t do rush jobs — so neither do we.
Why it lives in the fridge

Cold isn’t packaging. It’s what keeps the bacteria alive.

Once fermentation’s done, we chill it — cold slows the bacteria down without killing them, so they stay alive and active until you eat it.

Refrigerated (ours)

Never heated. Bacteria stay alive. Real probiotics, right up to the last spoonful.

Shelf-stable

Pasteurized with heat so it can sit at room temperature — which also kills the live bacteria. No heat, no shelf life problem, but no probiotics either.
